Ultimate Manwich

1 small red bell pepper, chopped
1 small onion, chopped
2 cloves garlic, chopped
1 chipotle chili pepper in adobo, chopped
2 Tbsp olive oil
1 (15 oz) can tomato sauce
1 (6 oz.) can tomato paste
1 Tbsp. apple cider vinegar
1 Tbsp. adobo sauce
2 Tbsp. of brown sugar
1/2 tsp. ground cumin
1/2 tsp. kosher salt
Dash of cinnamon

1 lb. ground beef
1/2 tsp. kosher salt
Fresh ground pepper, to taste
Big pinch crushed red pepper

1 cup extra sharp cheddar, shredded

Pour a couple tablespoons of olive oil into a large skillet and turned the heat to medium. Add the onions and red bell peppers (not the garlic yet). Cook the onions and peppers over medium heat, stirring regularly, until the onions were just slightly brown and the peppers were getting soft (about seven minutes). Add garlic and chopped chipotle chili and cook, stirring, for one more minute.

Add tomato sauce, tomato paste, apple cider vinegar, adobo sauce, brown sugar, ground cumin, kosher salt, and cinnamon and stir all together.

Let mixture cool slightly and puree the mixture in a blender until fairly smooth.

Over medium heat, crumble ground beef in the pan.

While it cooks, season with salt, pepper, and a generous pinch of crushed red pepper. Cook meat until it is almost fully cooked but still a little pink in some spots.

Drain off any fat as necessary and pour in all of the sauce from the blender. Stir together and set the heat to medium low.

Cook the mixture, stirring constantly until it is bubbling and thick enough to “mound” on a sandwich. Turn off heat.

Add shredded cheese (3 oz. or so) to the sauce mixture. Stir in cheese and sandwich filling is done.
